Ingredients:
2-3 medium eggplants, cubed
1 bell pepper, green or any color, cubed (optional)
1 medium onion, cubed (optional)
1-2 Tbsp oil
salt and pepper to taste
1 Tbsp cumin or taco seasoning
2 tsp garlic powder

Directions:
1. Wash hands with soap and water.
2. Rinse fresh vegetables under running water before preparing.
3. Cut up eggplants (peel first, if desired) onions and peppers (if using) and add to a mixing bowl.
4. Add oil, salt, pepper, and cumin or taco seasoning and garlic powder to the mixing bowl and mix well.
5. Spread oiled and seasoned vegetables onto a baking sheet and bake at 400 degrees for 20 minutes, or until all vegetables are golden and very soft.
6. Put cooked vegetables into a dish and mash with a potato masher until smooth. Top with more salt and pepper and a squeeze of lemon juice if desired.

Notes: This can be eaten as a dip with crackers, or spread on a toasted piece of bread. Enjoy!
